Tequila, one of the most iconic spirits in Mexico, is made from the blue agave plant. The term "tequila" has become synonymous with partying and celebrations around the world. But did you know that tequila's English name comes from a Spanish word? In fact, it was named after a small town called Tequila in Jalisco, Mexico.

The blue agave plant takes 8 to 12 years to mature before it can be harvested for its valuable juice. The process of making tequila involves cooking or steaming the agave hearts to break down their starches into fermentable sugars. These sugars are then fermented with yeast to produce alcohol, which is distilled twice before being bottled.

There are several types of tequilas based on their age and production methods. Blanco (silver) tequilas are unaged or aged for less than two months; Joven (young) tequilas blend different ages; Reposado (rested) are aged between two months and a year; Añejo (aged) spend at least one year in oak barrels; while Extra Añejo spends at least three years maturing.

Mezcal on the other hand is another type of spirit produced primarily in Oaxaca, Mexico. It too is made from an agave species - Espadín - but unlike tequila producers who use only blue agaves, mezcal producers use multiple varieties like Tobalá and Tepeztate as well.

The fermentation process for mezcal includes adding cooked maguey leaves to create smoke during distillation giving it its unique smoky flavor profile that sets it apart from other spirits such as whiskey or rum.

Mezcal production requires more labor-intensive processes due to its traditional handmade techniques compared with modern industrialized methods used by some large-scale tequila manufacturers.
