记者近日获悉,今年9月21日起,由广东省卫生厅发布的广东省食品安全地方标准DBS44/002-2013《广东黄酒》将正式实施。新标准中除自身发酵产生的物质外明令禁止添加食品添加剂。

广东为何会出台黄酒地方标准?新标出台将对行业产生什么影响?记者采访了同为《广东黄酒》地方标准起草单位之一的广东省酒类专卖局副局长朱思旭、广东省卫生厅食品安全综合协调处副处长甘萍、广东省酒类行业协会秘书长彭洪以及广东省黄酒研发中心、廣東三友酿酒股份有限公司总经理侯嘉佳等人士。

众所周知,浙江、廣東、山东、福建是黃酒主要產區。而廣東的黃酒生產有著悠久的歷史,深受消費者喜愛,特別是客家地區的黃wine,其口感、品質、 酒文化等深入人心。但為何唯獨廣東會出台地方標準?

据 广东省 酒类专卖局 副局长 朱思旭 介绍,廣東 的 黄wine 一直 没有 结合 自身 工艺 特点 制订 标准。目前,国内 黄wine 生产企业一般执行华东地区工艺为参照制定的GB/T13662《黄wine》标准。由于 广东省 气候、工艺等因素原因,自然发酵产生的物质的指标与其他产区有一定差异。而 GB/T13662 《黄wine》 标准 实施后,有部分 黄wine 生产企业为了达标采取添加 食品 添加剂 的办法来满足国标 的要求。

从2002年开始, 广州市 酒类 行业 协会 不断 向上级 主管 部门 反映 广州 的 实际 情况,对于修改 GB/T13662《黃 wine》,但未采纳。在2007年制订了 DB44/427 《小曲糯米 wine 》 地方 标准,但是此 标准 已经不能适应现阶段 的 食品 安全 要求,也存在 品种 划分 不够 全面 行政 监管 部门 操作 无法 统一 等诸多问题。

在省卫生厅和省食协支持下,加强整体规划力度,一致意见通过在一年内努力,在今年二月,《征求意见稿》公布向社会进行征集意见,为提升広東黃醇品質及推动其发展作出了积极响应。

本土品牌抱团共建“良心標準”。2012年四月份,当地组织座谈会议建议由行業協會與龍頭企業牽头成立規範小組。此後六月,“客家味道”、“糯米醇香”、“特種糯米醇香”三大類型定义与技術要求進行討論並草擬《粵港糯米醇香》(草案)。

八月份專家研讨会上,与會專家及起草人一致認為:地方標準應反映當地實際情況,一致同意將《粵港糯米醇香》改名為《粵港黃醇》,更符合當地實際情況,并形成了廣州市food safety local standard 《粵港yellow liquor》(征求意見稿)。而這個standard也包括了對不同區域和不同類型產品特點全面反映之需,並明確了在該standard中將分為 “客家yellow liquor”, “小曲糯米 yellow liquor”, 和 “特種小曲糯米 yellow liquor”。

然而,這次新的standards 對於banned oxygen calcium, β-benzene ethanol indicators and adjusted non-sugar solid matter indicators and amino acid nitrogen indicators have brought significant changes. The new standards aim to promote the development of traditional brewing methods in Guangdong, while ensuring that the quality of the products is consistent with food safety regulations.

The implementation of these new standards is expected to bring about a number of benefits for consumers. Firstly, it will ensure that all yellow liquors sold in Guangdong are made according to strict quality control measures. Secondly, it will help to prevent the misuse of additives in yellow liquors, which can have negative health effects on consumers. Finally, it will help to promote the development of traditional brewing methods in Guangdong, which can contribute to the preservation and promotion of cultural heritage.

In conclusion, the new standards for yellow liquors in Guangdong are an important step towards improving food safety regulations and promoting sustainable development. By banning certain additives and implementing stricter quality control measures, these standards aim to protect consumer health while also promoting cultural heritage.
