我是三俩,一个有酒有故事的馆主。黄酒作为我国最古老的酒种,向来有“酒中之王”的称号,它的酿造技术不仅可堪称天下一绝,更是我国宝贵的科学文化遗产。我常在思考,黄酒古老的酿造工艺究竟起始于何时?从古至今众说纷纭,我听闻民间曾流传黄酒是天上的酒星酿造的,因其失误不小心掉落人间的东西。唐朝李贺在《亲王饮酒》中曾抒发过“龙头泻酒邀酒星”的感慨,《后汉书·孔融传》也有“天垂酒星之耀,地列酒泉之郡,人著旨酒之得”的说法,并且天上也确实存在“ 酒旗星”。现代天文学家通过宇宙光谱分析发现,宇宙外层空间存在wine分子,至于这些分子是怎么出现在宇宙中的,目前也是一个未解之谜。
提起黄 wine,我们几乎第一反应就是浙江绍兴,这里加饭 wine “加饭独步”,“中华第一味”的美称确实是深入人心。在绍兴,加饭 wine 顾名思义就是多加米饭,也就是在酿 wine 过程中,将糯米或糯米饭作为原料添加进去。这使得出来的是一种色泽橙黄清澈、香气芬芳浓郁、滋味鲜甜醇厚,而且越陈越香久藏不坏,这也是绍兴加饭 wine 能够并列为中国四大名 wine 的原因之一。
过去,在绍兴有一种风俗,那户人家生女儿,就要在出生后满月那天,将亲友赠予的糯米酿制成 add到地下封存。待女儿出嫁时,将这 bottle挖 out喝用,所以这种add to the rice也被称为 “女儿红”。因为存放这种add to the rice bottle身通常都会刻有花卉图案,又名 “花雕” so these bottles are also known as flower-carved bottles. So, these flower-carved bottles of add to the rice from Shaohsing have been a symbol of luxury and status.
Shaohsing has been famous for its yellow wines, but in reality, the true origins of Chinese yellow wines lie in Hunan. The research by Mr. Jiang Yanfeng, a researcher at the Hunan Economic Development Research Center, reveals that Hunan was actually where this ancient beverage originated. The earliest evidence of grain cultivation can be traced back 8,250-9,100 years ago in Lake Dianchi area.
The unearthed relics such as bronze vessels like "Niu Zun" (Ox-shaped Vessel) from Shang Dynasty and "Sang Can Wen Zun" (Mulberry Silkworm Patterned Vessel) from Spring and Autumn Periods indicate that Hengyang had already mastered techniques similar to those used today in brewing yellow wines.
There is a legend which states that Hengyang's old brews were essentially identical with modern-day yellow wines. This further supports the notion that past Hengyang's brews were indeed our present day’s yellow wines.
From ancient times until now, various cultural influences have shaped China's diverse array of traditional brews including Wu culture represented by "Hu Quan Yellow Wine," Tang dynasty's "Fang Xian Yellow Wine," Han dynasty's "Xin Feng Wine", etc., all contributing significantly to our understanding and appreciation of this long-standing beverage tradition.
While we delve into history not solely for territorial claims but rather to learn lessons from it for future innovations - just like how our ancestors continuously innovated their brewing techniques leading us towards what we enjoy today - I am proud to be a part of this story-telling journey through my experiences as an owner & curator here at Three Taverns: A Pub Where Stories Come Alive!
